Smores Cheesecake Recipe

Yield: 12 Individual Cheesecakes

Making a Smores cheesecake is easier than you might think. This recipe is amazing!

Ingredients

Graham Cracker Crust

  • Cooking Spray
  • ¾ Cup Graham Cracker Crumbs
  • ¼ Cup Melted Butter
  • 2 Tablespoons Granulated Sugar

Chocolate Cream Cheese Filling

  • 8 oz. Cream Cheese, softened
  • 2 Tablespoons Sour Cream
  • 2 Tablespoons Granulated Sugar
  • 1 Large Egg
  • ¼ Cup Cocoa Powder

Topping

  • 4 Large Marshmallows
  • ½ Cup Chocolate Chips, melted

Instructions

    1. Line a muffin tin with paper liners and spray with cooking spray. Set aside.
    2. Preheat oven to 350 degrees F.

    To prepare the crust:

    1. In a large bowl, mix together graham crumbs, butter and sugar.
    2. Scoop the graham cracker mixture (about 1 tbsp) into each lined muffin section and press down with the back of the spoon.
    3. Bake for 5 minutes.

    For the cheesecake:

    1. Using an electric mixer, beat together cream cheese, sour cream, sugar and egg until well combined.
    2. Add cocoa powder and mix until well incorporated.
    3. Scoop cream cheese batter into each cup of baked graham cracker crust, filling each section.
    4. Bake for 20 minutes.
    5. Remove from oven and allow to cool for 5 minutes. Then, chill for at least 30 minutes.

    For the topping:

    1. Cut marshmallows into small pieces
    2. Top each mini cheesecake with 3-4 marshmallow pieces.
    3. Scoop melted chocolate into a piping bag and drizzle onto mini cheesecakes. Refrigerate for 10 minutes and allow chocolate to set.
    4. Serve and enjoy!

Notes

  1. Alternatively, you can use mini marshmallows on top of individual cheesecakes.
