Ingredients Needed to Make These Cookies
Here’s what you need to make this Red Velvet Recipe!
- Unsalted Sweet Cream Butter – Using unsalted butter gives you full control over the flavor, unlike salted butter, which can have inconsistent salt levels. This way, you can add just the right amount of salt to balance the sweetness without overdoing it.
- Light Brown Sugar – It adds a rich, molasses-like flavor that pairs perfectly with the cocoa in the red velvet base. It helps make the cookies nice and moist with just the right amount of chew.
- Egg Yolk – Egg yolks are key to this recipe—they’re what make the cookies so rich and delicious. The fat in the yolks gives the cookies that soft, tender texture that practically melts in your mouth.
- Pure Vanilla Extract – It boosts the flavor of the cookies, adding a warm, sweet aroma that pairs perfectly with the cocoa and cream cheese. Its rich, natural taste balances the bold red velvet base, making each bite smooth and delicious.
- Flour – It gives the cookies the structure they need to keep their shape while baking. When mixed with wet ingredients, flour creates a gluten network that makes the cookies strong yet perfectly textured.
- Red Food Coloring – Red food coloring is what gives red velvet cookies their bold, eye-catching look. It’s the secret to that classic red velvet vibe!
- Cocoa Powder – It adds that rich, chocolatey flavor we all love in red velvet, without being too much. Just the right balance of sweet and a little bitter.
- Holiday Sanding Sugar – Holiday sanding sugar is the perfect way to finish off these cookies! The bright colors add a fun, festive sparkle that’s perfect for holiday celebrations.
- Cream Cheese – It’s rich, creamy, and just a little tangy, which balances the sweetness of the cookies perfectly. That contrast makes every bite so satisfying!
- Sugar – It boosts the sweetness of the cookies and balances out the tangy cream cheese, giving you a filling that’s smooth, creamy, and totally indulgent.
- Kosher Salt – Its coarse texture dissolves perfectly, bringing out the flavors in the cream cheese filling without making it too salty.

Can I Prepare the Dough or Filling in Advance?
You can make both the dough and the filling ahead of time to save some hassle when it’s time to bake. For the dough, just wrap it up tightly in plastic wrap and pop it in the fridge—it’ll keep for up to 2 days.
Want to save it for longer? No problem! Freeze it for up to 3 months, but don’t forget to thaw it in the fridge overnight before you roll it out.
The cream cheese filling is just as easy to prep early—store it in an airtight container in the fridge for up to 3 days. When you’re ready to bake, let both the dough and filling come to room temperature for easier handling.
Can I Freeze the Cookies?
Freezing cookies is such a simple way to keep them fresh! Once they’ve cooled, just spread them out in a single layer on a baking sheet and stick them in the freezer for about an hour—that way, they won’t stick together.
After that, toss them in an airtight container or freezer bag, with parchment paper between the layers. They’ll stay good for up to 3 months! When you’re ready for one, just let it thaw or pop it in the oven to bring back that warm, fresh-baked taste.
How Do I Make Sure My Thumbprint Cookies Hold Their Shape?
If you want your thumbprint cookies to keep their shape, try chilling the dough before baking. Cold dough won’t spread as much, so your cookies will stay nice and round. When you’re making the indentations, go easy with your thumb or the back of a spoon—pressing too hard can cause cracks or thin spots.
And don’t go overboard with the filling! Too much can make the cookies spread unevenly. For the best results, use a parchment-lined baking sheet and keep an eye on them while they bake so they don’t overcook.

Instructions
- Preheat oven to 300 degrees and line a cookie sheet with parchment paper.

Very interesting, but curious to know what you used to create the dark brown/black specks in the cookie, as the only thing I see with a darker color being the cocoa.
