Late last week we headed out to San Antonio for my husband’s nephew’s graduation. We are still here. My kids never want to leave.
I had a goal to work on my next eBook while were here. Have not worked on it one bit, but have been doing behind the scenes blog stuff.
If you did not see the Broiled Italian Tomatoes I shared last week, check them out. They are perfect for a summer dinner and for any upcoming 4th of July cookout you are doing.
Here is our meal plan once we return home late tonight. We will get dinner on the table with real easy recipes.
Weekly Meal Plan
Weeknight Bologense– I made this Saturday night while we were visiting my in laws. I made some variations to make it a little simpler for a busy family. I am going to make it once more this week to perfect it and add it to my eBook. It doubles easily to make enough for two meals. My Easy Italian Salad and some French bread goes perfectly with this.
Western Meal– this is a casserole made with Minute Rice, hamburger meat and Ranch Style Beans. It is somewhat similar to the recipe I linked to, but I have my own version. Another meal that will be in the new eBook.
Sandwiches– easy! Served with fruit and chips.
Leftover Buffet– use ’em up!
