Weekly Meal Plan Ideas: Cooking from the Freezer (Week 221)
Have you prepared your meal plan for this week yet? If not, it’s time!
We’re still cooking from the freezer this week- we have a couple of meals left from our massive day of freezer meal cooking! This has made my life so much easier. And, even better, so many of these meals can be cooked in the slow cooker! Score!
Let me show you what we’re having this week.
Our Weekly Meal Plan:
Slow Cooker Chicken Fajitas– these are just so stinkin’ easy! Served with Puerto Rican Rice and beans. Yum! These are cooking as I type and my husband just walked in the door with a smile on his face. He loves a good home cooked meal around the table!
Maple Dijon Salmon– served with squash and potatoes. Can’t wait!
Taco Soup– served with cornbread.
Freezer Bean and Cheese Burritos– these are also from our big freezer meal preparations a few weeks ago. We’ve eaten some of these for lunch, but the rest will be eaten this week as a dinner.
Leftover Buffet– use ‘em up!!

Oh, this week, for the first time I am trying a local organic produce co-op delivery. I cannot wait! I will let you know how it goes.
This week in our harvest box there will be these items I am so excited to cook with:
- Kabocha Squash (I think I am going to roast it)
- Summer Squash
- Green Beans (FRESH!!)
- Garlic Scapes
- Yukon and Red Potato Medley
