Buttermilk Pancakes from Scratch

Have you ever made buttermilk pancakes from scratch before?

It is so much easier than you think and they taste amazing. It is very cost effective too.

This recipe includes items you likely already have on hand, with the exception of buttermilk. Grab a quart the next time you’re at the grocery story. This is a family loved breakfast and the recipe makes the perfect pancake!

Ingredients for Buttermilk Pancakes Recipe:

  • 2 1/2 c flour
  • 2 eggs, beaten
  • 2 1/2 c buttermilk
  • 1/2 c sugar
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 1 tsp salt
  • 4 T melted butter
  • 1 tsp vanilla
  • extra butter for your griddle to prevent sticking or griddle spray

Put all of your dry ingredients in a large bowl.

Add in all the the wet ingredients and whisk until well combined and there are no clumps.

Your batter will be nice and smooth just like this.

For pancakes I like to use a small soup ladle to pour the pancake batter onto the griddle.

I use a small, square, non-stick griddle like this one. Or, you can use a large skillet.

I keep the heat between 4 and 5 and I add a pat of butter to the griddle and let it melt before adding the batter.

I can cook two pancakes at a time on the griddle.

They are not ready to turn until the top of the pancake is covered in bubbles.

Flip it to cook the other side.

Limit the flipping, don’t flip the pancakes 100 times.

What Does Buttermilk do to Pancakes?

The buttermilk works with the baking soda to make a higher pancake. It makes for a thick and tender pancake.

Can I Make Buttermilk with Regular Milk?

You can. You just need to add fresh lemon juice or vinegar to your milk. You want 1 cup of milk to 1 T of vinegar or lemon juice.

What Does Egg Do For Pancakes?

Part of the reason you use eggs when cooking pancakes is because it holds the bubbles that pancakes make while they are cooking and also make the pancakes rise. The yolk also gives more flavor to the pancakes. That said, be careful. Too much egg will cause your pancakes to be dense and not enough egg will make them dry and more like a biscuit.

    These buttermilk pancakes look awesome. I could probably substitute a whole wheat mix flour for the white flour, that’s the only change that I would make. I’m trying to get away from white flour. Thanks for the recipe though, I will have to try this one for sure!

  9. These look delicious! I’m a total newbie at this stuff, but could regular milk be substituted instead of buttermilk?

    I also have gluten free flour/xanthan gum that I’m going to try substituting for my husband!
