Christmas Gumdrop Cookies

This is an easy recipe for gumdrop cookies that everyone will love. These cookies are soft and chewy, with a delicious flavor from the gumdrops. They're perfect for Christmas or any other special occasion.

Ingredients

  • 1 Cup Shortening
  • 1 Cup White Sugar
  • 1 Cup Brown Sugar
  • 2 Eggs (lightly beaten)
  • 1 Tablespoon Vanilla
  • 2 Cups Flour
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Salt
  • 2 Cups Oatmeal
  • 1 Cup Shredded Coconut
  • 1 Cup Gumdrops

Instructions

  1. Preheat your oven to 350 degrees.
  2. Combine together the white and brown sugars and then add in the eggs, vanilla and shortening until well combined.
  3. Using just a spoon, mix in the remaining dry ingredients until well combined.
  4. Lastly, mix in the gumdrop pieces.
  5. Roll the dough into 1 1/2 inch balls and place on a baking sheet. Flatten the cookie dough balls.
  6. Bake at 350 degrees for 10 to 12 minutes.
