Ingredients Needed for this Instant Pot Dessert
Here’s what you need to make this Gingerbread Cheesecake!
- Gingersnaps – These cookies add just the right amount of spice to really boost the flavors of the dessert. These crunchy cookies bring together ginger, molasses, and cinnamon for a warm, cozy taste that pairs wonderfully with the creamy cheesecake filling.
- Brown Sugar – This brings a rich flavor and a hint of caramel that pairs perfectly with those gingerbread spices. Its moist, molasses-like quality really amps up the cream cheese, giving the cheesecake that luxurious yet comforting texture.
- Unsalted Butter – Using unsalted butter gives you control over the saltiness, keeping the flavors perfectly balanced. If you use salted butter, it might overpower the spices and cream cheese, which we definitely don’t want.
- Cream Cheese – The rich and smooth texture is like a blank canvas for the flavors of ginger, cinnamon, and nutmeg to really shine. That little tang from the cream cheese adds a nice brightness to everything, keeping the cheesecake rich yet balanced—super tempting to eat!
- Large Eggs – They add structure and richness to the dessert, acting like a natural emulsifier that helps everything blend together smoothly. As the eggs cook, their proteins set, giving the cheesecake that perfect firm yet creamy texture, even in the moist environment of the Instant Pot.
- Sour Cream – Sour cream really helps enhance that creamy texture while adding a little tang that balances out the sweetness perfectly. Plus, that tangy flavor pairs so well with the warm spices of gingerbread, giving it a richer taste. It also keeps the cheesecake nice and moist during pressure cooking, so every slice stays velvety smooth.
- Sugar – Sugar sweetens the dessert and really enhances the flavor. It balances out the spicy gingerbread notes, so they don’t overpower everything. When sugar dissolves, it mixes right into the batter, giving that smooth, creamy texture we all love in a cheesecake. It helps with browning, adding a nice caramelized touch that perfectly complements the molasses in the brown sugar and gingersnap crust.
- Cornstarch – It helps stabilize and thicken the cheesecake mixture, which is super important for preventing cracks. By soaking up excess moisture, it gives the cheesecake a smooth texture—especially helpful in the moist environment of an Instant Pot. It acts like a bonding agent, making sure all the ingredients mix together nicely for that creamy consistency we love.
- Vanilla – Vanilla brings a subtle yet powerful boost to the dessert’s flavor. The warm, aromatic notes of vanilla really enhance the gingerbread spices without taking over, creating a lovely blend that adds depth to the cheesecake. Its natural sweetness balances out the tanginess of the cream cheese and sour cream.
- Salt – Even though you use just a little, it’s super important for balancing the sweetness and bringing out those warm gingerbread spices. It helps the flavors of ginger, cinnamon, and nutmeg pop! Salt adds depth by highlighting the tangy notes from the cream cheese and sour cream, making every bite more delicious.
- Cinnamon – Cinnamon brings that cozy warmth and spice that makes gingerbread so special. The sweet aroma pairs perfectly with the creamy richness of the cream cheese and the tangy sour cream, creating a lovely balance of flavors.
- Ground Ginger – It adds that signature punch of flavor and warm aroma that makes the dessert so special. With its spicy-sweet kick, ground ginger really captures the essence of gingerbread, pairing perfectly with other spices like cinnamon and nutmeg.
- Heavy Cream – When whipped, heavy cream transforms into a light, airy topping that contrasts beautifully with the dense, creamy cheesecake beneath. Its neutral flavor profile allows the spicy and aromatic notes of the gingerbread to shine, while also balancing the tanginess of the cheesecake’s interior layers. Heavy cream enhances the luxurious mouthfeel of the dessert, adding an indulgent creaminess that is both satisfying and comforting.
- Powdered Sugar – The fine texture dissolves quickly, giving a smooth sweetness that blends perfectly with the whipped cream. This means you get all that delicious creaminess without any graininess. The delicate sweetness really complements the rich, spicy gingerbread flavors, letting them shine.
- Gingerbread Sprinkles – Not only do they look great, but Gingerbread Sprinkles also pack in an extra layer of flavor. The crunchy texture pairs perfectly with the creamy cheesecake, giving you an exciting mouthfeel with every bite. Those gingerbread-flavored sprinkles add even more spice, bringing out the classic holiday flavors of ginger, cinnamon, and nutmeg that we all love.

Can I Make this Cheesecake Ahead of Time?
Making this cheesecake ahead of time is such a smart move! It actually gets better after a little chill in the fridge, letting all those delicious flavors blend and making the texture super creamy and smooth. Once you’ve cooked it and let it cool to room temperature, just wrap it tightly in plastic wrap or aluminum foil.
You can pop it in the fridge overnight or even up to two days before you need it. Just keep it chilled until you’re ready to dig in, and you’ll have a perfectly set, tasty dessert that’s sure to impress at any gathering!
How Should I Store Leftovers?
To store your leftovers, start by letting the cheesecake cool completely. Once it’s cool, slice it into the portions you want and pop each slice into an airtight container to keep it fresh. If you prefer, you can also wrap the whole cheesecake or individual slices tightly in plastic wrap or aluminum foil before putting them in the container.
Keeping the cheesecake in the fridge will keep it tasty for up to five days. If you want to save it for longer, just wrap it up and put it in a freezer-safe container. When you’re ready to dig in again, just thaw it in the fridge overnight for the best texture and flavor!
How Do I Prevent Cracks in My Cheesecake?
Preventing cracks in your cheesecake is all about preparation and technique! First off, make sure all your ingredients are at room temperature before you mix them—this helps create a nice, smooth batter. When you’re combining everything, try not to overmix; too much air can lead to those pesky cracks while baking.
Using a water bath or bain-marie can work wonders too! The steam creates a gentle, moist cooking environment that helps keep the surface crack-free. Keep an eye on your baking time and temperature—go for a slow, even bake, and check for doneness a bit early; the center should be set but still have a little jiggle.
And don’t forget to let your cheesecake cool gradually in the oven with the door slightly ajar. This way, you can avoid those sudden temperature changes that can cause cracks. Happy baking!
