Instant Pot Gingerbread Cheesecake Recipe

Indulge in this quick and easy gingerbread cheesecake recipe made with gingersnaps, brown sugar, and cream cheese.

Ingredients

Crust Ingredients:

  • 1 Bag Gingersnaps
  • 1 Teaspoon Brown Sugar
  • 3 Tablespoon Unsalted Butter, melted

Cheesecake Ingredients:

  • 2 (8 Ounce) Packages of Cream Cheese, room temperature
  • 2 Large Eggs, room temperature
  • 1/2 Cup Sour Cream, room temperature
  • 2/3 Cup Sugar
  • 2 Tablespoons Cornstarch
  • 2 Teaspoon Vanilla
  • 1/8 Teaspoon Salt
  • 1/4 Teaspoon Cinnamon
  • 1/4 Teaspoon Ground Ginger

Topping Ingredients:

  • 1 Cup Heavy Cream, chilled
  • 1/2 Cup Powdered Sugar
  • 1/2 Teaspoon Vanilla
  • Small Gingerbread Men or Gingerbread Sprinkles, optional

Instructions

  1. Prep pan with nonstick spray.
  2. Line the sides of the pan with parchment paper.

To make the Crust:

  1. Add gingersnaps and brown sugar in the food processor and blend until the mixture is fine.
  2. Add the melted butter and gingersnap sugar mixture in a large bowl. Mix until completely combined.
  3. Spoon the crumb mixture into the prepared pan. Spread the mixture in the pan making an even layer.
  4. Press the mixture, using the bottom of a glass, into an even layer.
  5. With your fingertips press down around the edges of the pan.
  6. Transfer the crust to the freezer until the batter has been made,

Make the Batter:

  1. Add sugar and cornstarch to a small bowl. Mix to blend.
  2. Add the sugar mixture and cream cheese in the mixing bowl. Beat until combined. Use a spatula to scrape the sides of the bowl.
  3. Lower the speed on the mixer to low.
  4. All of the following ingredients should be at room temp. Add the eggs, sour cream, vanilla, salt, cinnamon, and ground ginger to the sugar/cream cheese mixture.
  5. Scrape the sides of the bowl while blending the ingredients.
  6. Continue to incorporate all ingredients but don't over mix.
  7. Take the crust from the freezer.
  8. Add the batter into the pan.
  9. Lightly tap the pan on the counter to release air bubbles allowing them to rise to the surface. Using a toothpick pop all of the bubbles

Instant Pot Directions:

  1. Place the Instant Pot on the counter. Put a trivet in the Instant pot.
  2. Pour 1 cup of water into the pot. Cover the pan with foil.
  3. Carefully set the pan on the trivet.
  4. Cook at high pressure for 26 mins.
  5. Allow a natural pressure release - this will take about 20-30 minutes.
  6. Take the pan from the instant pot and uncover.
  7. Set the cheesecake aside for about 1 hour to cool to room temp.
  8. Once the cheesecake is at room temp using a paring knife carefully run the knife around the edge of the cheesecake to separate it from the pan.
  9. Transfer the cheesecake to the refrigerator for at least 6 hours or overnight to set.
  10. Carefully remove the cheesecake from the pan.

Topping Directions:

  1. Chill the mixing bowl and beaters.
  2. Add chilled whipping cream to a mixing bowl with electric mixer.
  3. Add sugar and vanilla continue to beat until medium peaks begin to form. (3-4 mins)
  4. Put a star tip in a piping bag and scoop the whipped cream into the pipping bag.
  5. Spread a layer of the whipped cream on the top of the cheesecake.
  6. Pipe dollops around the edge of the cheese cake.
  7. Sprinkle the mini gingerbread men on the dollops.
  8. Garnish with small gingerbread men.
