Tips for Making Pecan Pie Desserts

  • Buy fresh if at all possible. I know, I know, they’re nuts and last forever (right?!), but the deal is that even though they really do last, the fresher they are, the more sweet and tender the meat will be. So, if you can buy some at a roadside stand fresh from the farmer, that’ll be the best pecan you’ve ever eaten.
  • Use a nutcracker. Look, pecans are a tough nut to crack and nine-times-out-of-ten they’re not going crack with your hands. And banging on them with a hammer, while effective for demolishing the shell, will also demolish the tasty morsel inside. So, skip the hand and hammer, choose the nutcracker instead.
  • Toss the shriveled ones. There are some yummier ones, I promise. The shriveled ones are just not worth your time. Grab another nut and keep going, because you’re not going to enjoy that shriveled lump of ick.
  • Always clean your hulls. The wrinkly mess that is the pecan meat is bound up with the internal wrinkly mess that is the pecan hull. So, sometimes those wrinkles pinch and hold, despite being shelled. So, take a toothpick and knock out the bits of shell that get stuck. You should do this with pre-shelled pecans, too, because the machines can’t get the bits out of those gnarly wrinkles.
  • Chop with a butcher knife. If your recipe calls for chopped pecans, you really shouldn’t go for your paring knife. Grab your butcher knife and work it low and close to the cutting board–and only doing a handful of pecans at a time. That way you’re not crushing the pecans, but chopping them into nice chunks.
