Ingredients Needed for these Cookies
Here’s what you need for this pumpkin recipe!
- Unsalted Butter – Unsalted butter gives you better control over the salt, letting the sweet and spicy flavors of pumpkin and maple really shine through. Plus, it keeps things fresh—without added salt, the butter stays creamy and tasty.
- Light Brown Sugar – Light brown sugar not only sweetens things up but also adds a great texture and richness to the cookies. The molasses in the light brown sugar gives a nice hint of caramel that pairs perfectly with the warm spices and pumpkin.
- Sugar – Sugar adds sweetness and helps give the cookies their structure and texture. When you cream sugar with butter, it whips in air, making the cookies lighter and fluffier. Plus, sugar attracts moisture, so your cookies stay soft and chewy after baking.
- Instant Coffee Granules – Adding instant coffee granules brings a delicious depth of flavor that really amps up the cookies! The coffee adds a subtle kick that highlights the sweetness of the pumpkin and maple without taking over. Instant coffee granules dissolve easily while baking, so they mix right into the dough, and they help create that lovely Maillard reaction, resulting in a thicker, chewier cookie.
- Pumpkin Pie Spice – This spice blend is the perfect ingredient that really brings the Pumpkin Maple Cookie Recipe to life, capturing all the cozy vibes of autumn in every bite. This warm mix usually has cinnamon, nutmeg, ginger, and allspice, each adding its own unique flavor that works together beautifully with the sweetness of pumpkin and maple.
- Salt – It sounds a bit surprising to add salt to something sweet, but trust me, it brings out all the flavors and balances everything just right. It really enhances the warmth of the spices and the sweetness of the pumpkin and maple.
- Flour – Flour gives the cookies their structure and stability, acting like the backbone of the dough. The type of flour you choose really affects the texture—using all-purpose flour hits that sweet spot between tenderness and chewiness. Flour makes the cookies chewy and helps them rise while baking.
- Maple Candy Melts – Maple candy melts add a rich, authentic maple flavor that really boosts the cookies’ sweetness. Plus, their smooth and creamy texture pairs perfectly with the soft, chewy cookies, giving you a delightful contrast in every bite. As they melt while baking, they fill the cookies with a deep maple essence that screams autumn.
- Coconut Oil – Coconut oil is a great addition to the Pumpkin Maple Cookie Recipe! It really boosts both the texture and flavor of the cookies. Instead of using traditional fats like butter, coconut oil works wonders. It adds a nice richness while keeping the cookies moist and chewy, making them even more enjoyable to eat.
- Finely Chopped Pecans – They bring a lovely texture and a rich, nutty flavor that really complements the other ingredients. Plus, they add a delightful crunch to those soft cookies. Not to mention, pecans are packed with healthy fats and protein, which makes these treats a bit more nutritious.

Can I Omit the Pecans or Substitute Them with Another Nut?
If you’re not into pecans or have allergies, feel free to skip them or swap them out for another nut. Walnuts are a great alternative if you want something with a similar crunch and flavor. If you’re in the mood for something sweeter, roasted hazelnuts or almonds are fantastic too—they pair so well with pumpkin and maple!
If you’re looking for a nut-free option, you can go for seeds like pumpkin or sunflower seeds. They’ll still give your Pumpkin Maple Cookies some nice texture and a healthy boost. Just remember to tweak the quantities a bit to keep that perfect cookie consistency!
How Should I Store These Cookies?
To keep your Pumpkin Maple Cookies fresh and tasty, storing them the right way is key! Let them cool completely on a wire rack before you tuck them away. Once they’re cool, pop them in an airtight container at room temperature. This will keep them soft and chewy for up to a week!
Want to save some for later? You can freeze them too! Just lay them out in a single layer on a baking sheet until they’re solid, then transfer them to a freezer-safe bag or container. When you’re ready to enjoy them, just thaw them at room temperature for a few hours or warm them up in the oven for a bit to bring back that yummy freshly-baked flavor.
