Weekly Meal Plan: Ready for Fall (Week 223)
We have lots of fresh Fall produce on hand that needs to be used up. Squash, avocados, potatoes, pears, pomegranate, arugula, apples and more!
This week our meal plan will focus on using up these fruits and vegetables. I think I am going to try my hand at making apple sauce in the slow cooker. Have you ever done that before?
Weekly Meal Plan
Italian Chicken– served with pasta and a fresh arugula salad. This is a slow cooker meal. Served with pears.
Sunday Roasted Chicken– this will use up carrots, potatoes and chicken. All in the slow cooker. I have been making this for as long as I’ve followed one of my favorite food blog Eat at Home!
Pesto Salmon Foil Packets– I have grape tomatoes and fresh green beans in the crisper to add to this. These will be awesome! I will also prepare some baked butternut squash on the side.
One Pot Macaroni and Beef Pasta– remember that one pot pasta I made a few weeks ago? It is a great way to clean out the fridge. For this one I am going to use up the corn and tomatoes in the fridge. Can’t wait!
The Best Omelets Ever– yesterday my friend Kim brought me 48 fresh eggs from her chickens. We’re putting these to good use. This is also another great way to use up fresh veggies.
