  • 2 Sugar Pie Pumpkins, cut in half and deseeded
  • 1 1/4 Cups Brown Sugar
  • 3/4 Cup Maple Syrup
  • 1 1/2 Teaspoons Ground Cinnamon
  • 1 Teaspoon Pumpkin Pie Spice
  • Pinch of Kosher Salt
  • Juice of 1 Lemon
  • 3 Ounces Bourbon

Instructions

  1. Place pumpkin cut side down on a baking sheet and roast in the oven for 50-60 minutes, or until pumpkins are thoroughly cooked.
  2. Remove from the oven and set aside to cool.
  3. Scrape the cooked pumpkin from the skins and place in a blender.
