  3. Pipe from the outside in – Begin at the outer edge of the cupcake and slowly swirl toward the center for a full, even look.
  4. Add height for drama – For that professional touch, add a second swirl layer to the icing, building it a little higher.
  5. Use a steady hand – Keep your hand steady and use even pressure while piping. Take your time—it’s not a race!
  6. Decorate right after icing – Sprinkles, chocolate chips, or cookie crumbles will stick best when the icing is freshly piped.
  7. Try a dusting of color – For extra flair, lightly dust the tops with edible glitter or colored sugar for a pop of sparkle.
  8. Use a spatula for texture – If you don’t have a piping bag, use an offset spatula to swirl the icing and create rustic, homemade patterns.
  9. Chill before transporting – If you plan on moving your cupcakes, pop them in the fridge for 15 minutes to set the icing.

St Patricks Day Cupcake with Mint Oreo Icing

Ingredients

Chocolate Cupcake Ingredients

  • 1 C flour
  • ¼ C unsweetened cocoa powder
  • ¾ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ C light brown sugar
  • ½ C sugar
  • ⅓ C Canola oil
  • ½ C buttermilk
  • 1 large egg
  • 1 tsp. vanilla extract

Mint Icing

  • 1 C unsalted sweet cream butter, softened
  • 3 C powdered sugar
  • 1/4 C ground mint Oreo cookies
  • 2-3 drops of mint green food coloring
  • 2 tsp mint extract
  • 5 tbsp heavy whipping cream

Decoration ingredients

  • 1 C andes baking chips
  • 22 Mint oreo cookies, cut in half

Instructions

    Baking the Cupcakes

  1. Preheat your oven to 350°F (175°C). Line a cupcake pan with St. Patrick's Day-themed cupcake liners.
  2. In a large bowl, mix together the flour, cocoa powder, baking powder, baking soda, and salt until combined.
  3. Add the sugar and brown sugar to the dry ingredients and stir until evenly mixed.
  4. Pour in the canola oil, buttermilk, egg, and vanilla extract. Stir until the batter is smooth and well-combined.
  5. Fill each cupcake liner about 3/4 full with the batter.
  6. Sprinkle graham cracker crumbs on top of the batter in each liner.
  7. Bake in the preheated oven for 21 minutes.
  8. Remove the cupcakes from the oven and transfer them to a wire rack to cool completely.

Making the Frosting

  1. Blend 6 Mint Oreo cookies in a blender or food processor until fine crumbs form (this should yield about 1/4 cup).
