Ingredients Needed for Delicious Sweet Rolls
Here’s what you need to make this blueberry recipe!
- Lemon Cake Mix – The tangy lemon flavor from the cake mix pairs perfectly with the tartness of fresh blueberries, creating a delicious combo that excites your taste buds. Plus, using lemon cake mix means each roll has a consistent texture and richness, making the whole process stress-free and foolproof.
- All Purpose Flour – All-purpose flour gives the rolls their structure and texture having just the right amount of protein, making it super versatile for baking. When mixed with liquids, it forms gluten, which gives the dough elasticity and strength. This means your rolls will rise nicely and hold the blueberries and lemon glaze without getting too dense or crumbly.
- Granulated Sugar – Granulated sugar adds that perfect sweetness, boosting the natural flavors of the blueberries and the lemon glaze. Plus, it makes the rolls super tender by working its magic with the flour and fat during baking, so you get a soft and moist treat.
- Active Dry Yeast – This yeast not only gives the rolls a light and airy structure but also adds some subtle, complex flavors during the rising process. Active dry yeast is super reliable because it lasts longer than fresh yeast and activates easily in warm water. Using it in your recipe ensures your blueberry rolls rise perfectly, resulting in a soft and tender crumb.
- Canola Oil – This oil adds just the right amount of moisture and tenderness to the dough, making those rolls soft and fluffy. Unlike stronger oils, canola oil’s light texture means the dough stays pliable, perfect for those melt-in-your-mouth bites. And here’s a bonus: it’s healthier too, with low saturated fats and lots of omega-3 fatty acids.
- Lemon Zest – The zest, which is just the outer colored part of the lemon peel, is packed with essential oils, way more intense than the juice. Adding lemon zest to the rolls infuses the dough and glaze with a refreshing zing that pairs perfectly with the sweet blueberries.
- Sweet Cream Butter – Made from fresh pasteurized cream, sweet cream butter has a mild yet creamy taste that really boosts the flavor of the rolls without overshadowing the lemon and blueberry notes. Its high-fat content keeps the dough tender and moist, giving you that melt-in-your-mouth texture that’s both indulgent and satisfying. When added to the dough, sweet cream butter helps create a flaky, tender crumb, just perfect for holding the sweet and tangy filling.
- Fresh Blueberries – Fresh blueberries are the star of Blueberry Rolls with Lemon Glaze, adding a burst of natural sweetness and juiciness that takes the flavor up a notch. Their slightly tart and tangy taste pairs perfectly with the lemon glaze, creating a balance that makes each bite super refreshing. When baked, these blueberries soften and release their juices, blending into the dough and glaze, adding moisture and a vibrant blue color that makes the rolls look amazing.
- Powdered Sugar – It adds the right sweetness and texture that make the glaze stand out. Thanks to its fine, powdery consistency, the glaze stays smooth and lump-free, coating the rolls evenly and beautifully. Plus, it dissolves easily, so you get the perfect consistency—neither too thick nor too thin.
- Milk or Heavy Cream – When mixed with powdered sugar and lemon juice, milk or heavy cream contributes to a rich, creamy glaze that perfectly complements the soft, tender rolls. The fat content in milk or heavy cream ensures the glaze is smooth and glossy, allowing it to adherently coat the rolls without running off.
- Vanilla Extract – It adds depth and complexity, enhancing the flavor in a big way. Vanilla brings out the sweetness of the powdered sugar and blueberries, while also balancing the tartness of the lemon juice. Its warm, inviting aroma makes the glaze smell amazing.

Can I Make the Dough for the Blueberry Rolls Ahead of Time?
Yes, you can make the dough for the blueberry rolls ahead of time, making baking even easier. After preparing the dough, you have a couple of options. You can let it rise once, shape the rolls, and then refrigerate them overnight. This way, the flavors get a boost from the slow fermentation. Just remember to bring the rolls to room temperature before baking the next day.
Another option is to freeze the shaped rolls before the final rise. When you’re ready to bake, let them thaw and rise at room temp before popping them in the oven. Both methods let you enjoy fresh, homemade blueberry rolls with lemon glaze without spending an entire day baking.
Can I Use Frozen Blueberries Instead of Fresh Ones?
Absolutely, you can use frozen blueberries instead of fresh ones in your blueberry rolls with lemon glaze. Just keep a few things in mind to make sure they turn out just as delicious. First, thaw the frozen blueberries and drain any extra liquid to avoid too much moisture messing with the dough’s texture.
Also, frozen blueberries might bleed their color more than fresh ones, which could tint your dough a bit, but no worries—it won’t affect the taste. Tossing the thawed berries in a bit of flour can help keep them from sinking to the bottom while baking. Overall, frozen blueberries are a handy and versatile substitute that can be just as tasty.
How Should I Store Any Leftover Blueberry Rolls?
To keep your leftover blueberry rolls with lemon glaze fresh and tasty, just pop them in an airtight container at room temperature, and they’ll be good for up to 2 days. If you want them to last longer, stick them in the fridge for up to a week—just make sure they’re well-covered so they don’t dry out.
For even more extended storage, you can freeze the rolls. Put them in an airtight container or a freezer-safe bag, and they’ll stay delicious for up to 3 months. When you’re ready to dig in, let the rolls thaw at room temperature or warm them up in the oven to bring back their soft, tender goodness.

- 1 Box Lemon Cake Mix
- 2 1/2 Cups All Purpose Flour
- 1 Cup Granulated Sugar
- 2 1/2 Teaspoons Active Dry Yeast
- 2 Cups Warm Water
- 1 Tablespoon Canola Oil
- 3 Tablespoons Lemon Zest
- 1/2 Cup Sweet Cream Butter
- 1 Pound Fresh Blueberries, washed
Lemon Glaze
- 4 Cups Powdered Sugar
- 5 Tablespoons Milk or Heavy Cream
- 1 1/2 Teaspoon Real Vanilla Extract
- 1 Large Lemon, zested and juiced
Instructions
- In a large mixing bowl, mix together the cake mix, flour, warm water, lemon zest and yeast.
- Mix it until it is well combined.
- Once combined place the dough onto a floured surface and knead it until the dough bounces back after touching it
- Grab a large glass bowl and brush the inside with the oil.
- Place the dough into the bowl and brush the top of it with some of the oil as well. This will keep the towel from sticking to it when you cover it.
- Cover the bowl with a kitchen towel and allow it to rest for one hour.
- After an hour the dough should be double in size.
- Place the dough on a floured surface and roll out to 1/8 inch.
- Melt the butter in the microwave.
- Brush the rolled out dough with the melted butter and evenly sprinkle it with sugar.
- Spread the blueberries all over the rolled out dough.
- On the long side, roll the dough up into a long log, just like you do when you’re making cinnamon rolls.
- Cut the dough into 1 1/2 inch thick rolls.
- Place rolls into a baking dish and cover again for another hour.
- Preheat the oven to 350 degrees.
- Once oven is preheated, bake the rolls for 30 minutes.
- For the lemon glaze, combine the powdered sugar, vanilla, milk, lemon zest and lemon juice together until it’s nice and creamy using a mixer.
- Once the sweet rolls are done baking, remove them from the oven.
- Drizzle the glaze onto the rolls.
- Allow the rolls to cool for about 15 to 20 minutes.
- Serve them up with some fresh blueberries.
