Indulge in the ultimate fall treat with this delicious Pumpkin Spice Cheesecake Donut Recipe!

Ingredients

Dough Ingredients:

  • 3/4 Cup Milk
  • 1/3 Cup Sugar
  • 2 Teaspoons Yeast
  • 2 Eggs
  • 1/2 Cup Pumpkin Puree
  • 1 Teaspoon Ground Cinnamon
  • 1/2 Teaspoon Ground Ginger
  • 1/2 Teaspoon Nutmeg
  • 2 Teaspoons Vanilla
  • 1 Teaspoon Salt
  • 4 Cups Flour
  • 6 Tablespoons Butter, softened and cubed

Filling Ingredients:

  • 2 8-Ounce Packages Cream Cheese, softened
  • 1 Cup Powdered Sugar
  • 1 Teaspoon Vanilla
  • 1 Teaspoon Pumpkin Pie Spice
  • 1/2 Teaspoon Ground Cinnamon
  • 1/4 Teaspoon Salt
  • 1/3 Cup Heavy Cream

Sugar Coating:

  • 1/2 Cup Sugar
  • 2 Teaspoons Pumpkin Pie Spice

Instructions

To make the dough:

  1. Heat milk in microwave for 30 seconds until lukewarm.
  2. In the bowl of a stand mixer, add milk, yeast and 2 Tablespoons of sugar and stir.
  3. Add the flour, remaining sugar, eggs, pumpkin, spices and vanilla. Mix just until combined.
  4. Switching to a dough hook and knead for 5 minutes on low.
  5. Slowly add in butter, 1-2 cubes at a time with mixer on low. Knead for an additional 10- 15 minutes on medium speed until dough is smooth and elastic.
  6. Transfer the dough to a lightly greased bowl and cover with a clean towel or plastic wrap. Allow dough to rise 45 minutes to 1 hour or until double in size. You can also proof dough in the refrigerator overnight.

Make the filling:

  1. While dough is rising, make the filling. Using a stand mixer, beat cream cheese, powdered sugar, vanilla and spices until light and fluffy. Add the heavy cream and mix until smooth and creamy, about 2 minutes. Refrigerate until ready to use.
  2. Once dough has doubled in size, punch down to deflate. Dump dough onto a lightly floured surface and divide into 12 equal pieces. Shape pieces into a tight, round ball.
  3. Place dough balls onto a baking sheet lined with lightly greased parchment. Flatten with the palm of your hand slightly. Let rise an addtional 30 minutes. If dough proofed overnight in refrigerator, let rise 1 hour.
  4. Prepare a pan or deep fryer with 2 inches of oil and heat to 350 degrees. Line a baking sheet with parchment and a cooling rack on top.
  5. Fry doughnuts a few at a time, for about 2 minutes on each side until golden brown. Transfer to cooling rack. 
  6. Mix 1/2 cup sugar and pumpkin pie spice. When doughnuts are cool enough to handle, roll in the sugar and spice mixture to cover. Let cool completely.
  7. Transfer filling to a piping bag fitted with a pastry tip. Using a chopstick or small knife, poke a small hole in the side of the doughnut. Fill with filling.
